We have a tasting tonight at Slimming World and need to take in soups or stews as 'winter warmers'.
Mmmmmmmm, what to make...
I have carrots, onions, oranges - aha!!! Carrot and orange soup.
Recipe as follows:
1 1/2 lb carrots
1 teaspoon coriander seeds
1 large orange
1 large onion
2 cloves garlic
800ml veg stock
1. Peel and chop carrots. Chop onion and garlic. Grind coriander seeds in a pestle and mortar (you could use ready-ground coriander if you have it). Grate most of the rind off the orange and juice it.
2. Sweat the onions for a few minutes over a low heat. Add garlic and coriander seeds and cook another couple of minutes (yes, I know that's not very exact but just give it a go).
3. Add carrots and stock, bring to the boil and simmer for 15 minutes.
4. Add orange rind and juice and simmer for another 5 minutes or so.
5. Blend and enjoy.
This soup is very sweet, thick and orangey. You could use a smaller orange if you don't want so much of an orangey taste.
